Instructions
- Mix flour, butter, sugar, salt, cinnamon, and ginger in a food processor for 1 minute until crumble texture forms.
- Heat oven to 170°C. Line a 12-hole muffin tin with paper liners.
- Grate 200g granny smith apples and combine with 170g brown sugar, 120ml vegetable oil, and 1 egg in a large mixing bowl.
- Sift 250g plain flour, 1 tsp baking powder, 1 tsp vanilla, 1 tsp cinnamon, ½ tsp ginger, and ¼ tsp salt into the wet ingredients. Stir until just mixed.
- Fill each muffin liner with batter, leaving a small space at the top.
- Sprinkle 50g chopped pecans over muffins if desired.
- Top each muffin with prepared crumble mixture and a pinch of demerara sugar.
- Bake at 170°C for 22 minutes, rotating the pan halfway through for even browning.
- Whip 100g softened salted butter with an electric mixer on medium speed for 5 minutes.
- Gradually stream 50ml maple syrup into butter while continuing to whip until light and fluffy.
