Instructions

  2. In another large bowl, cream 2 sticks softened butter with 1 ¾ cups sugar until the mixture becomes pale and fluffy, which takes about 4 minutes with an electric mixer.
  3. Add 2 eggs one at a time, beating well after each addition. Stir in 1 teaspoon vanilla extract until fully incorporated.
  4. Gently mix dry ingredients into the butter mixture, alternating with 1 ½ cups applesauce. Always start and end with dry ingredients, mixing on low speed to prevent overmixing.
  5. If desired, carefully fold in 1 cup raisins and/or 1 cup chopped walnuts into the batter.
  6. Position your oven rack in the center and heat to 350F. Thoroughly coat a 9×13 inch baking pan with butter and flour.
  7. Pour the batter into the prepared pan, spreading it evenly with a spatula to ensure smooth distribution.
  8. Bake at 350F for 32-35 minutes. Check doneness by inserting a wooden skewer into the center – it should come out clean.
