Dough Ingredients:

  • 4 ½ cups All-purpose flour
  • 2 Large eggs
  • 1 cup Milk
  • 10 tablespoons Unsalted butter
  • ¼ cup White granulated sugar
  • 2 ¼ teaspoons Active dry yeast
  • 1 teaspoon Salt

Supporting Ingredients:

  • ½ cup Unsalted butter
  • ½ cup Brown sugar
  • ½ tablespoon Ground cinnamon
  • ⅛ teaspoon Salt

Finishing Ingredients:

  • 16 ounces Peaches
  • ¾ cup White granulated sugar
  • 1 tablespoon Lemon juice
  • 4 ounces Cream cheese
  • 4 tablespoons Unsalted butter
  • 2 teaspoons Pure vanilla extract
  • 1 cup Powdered sugar
  • 12 tablespoons Milk
  • ½ cup Brown sugar
  • ¼ cup White granulated sugar
  • ½ tablespoon Ground cinnamon
  • ¼ teaspoon Salt
  • 1 ¼ cups All-purpose flour
  • ½ cup Unsalted butter

Instructions

  1. Activate yeast by mixing 1 cup milk warmed to 110°F with 2 ¼ tsp active dry yeast. Allow mixture to sit for 10 minutes until foamy.
  2. Combine 4 ½ cups flour, 1 tsp salt, and ¼ cup sugar in a large mixing bowl. Cut 10 TBSP room temperature butter into flour mixture using pastry cutter.
  3. Add milk/yeast mixture and 2 slightly beaten eggs to flour. Knead with stand mixer and dough hook for 5 minutes on low speed.
  4. Spray a bowl with cooking spray. Place dough inside, cover, and let rise in oven preheated to 200°F for 1 hour until doubled.
  5. Create peach jam by combining 16 oz peaches, ¾ cup sugar, and 1 TBSP lemon juice in saucepan. Cook over medium heat for 5-10 minutes until thickened.
  6. Prepare crumb topping by mixing ½ cup brown sugar, ¼ cup white sugar, ½ TBSP cinnamon, ¼ tsp salt, 1 ¼ cups flour, and ½ cup melted butter.
  7. Bake crumb topping at 350°F for 8 minutes. Allow to cool completely.
  8. Blend ½ cup butter, ½ cup brown sugar, ½ TBSP cinnamon, and ⅛ tsp salt for filling until smooth.
  9. Roll dough into rectangle. Spread filling, then cooled jam, and sprinkle half the crumb topping.
  10. Roll dough into log and slice into 12 even rolls. Place in sprayed 9×13-inch pan.
  11. Let rolls rise for 20 minutes. Preheat oven to 375°F.
  12. Bake rolls for 23-26 minutes until golden brown.
  13. Whip 4 oz cream cheese, 4 TBSP butter, 2 tsp vanilla, and 1 cup powdered sugar. Add 1-2 TBSP milk for desired consistency.
  14. Spread icing on hot rolls and sprinkle remaining crumb topping.

  • Use a kitchen thermometer to ensure the milk is precisely 110°F for activating yeast without killing it.
  • Allow plenty of rising time to develop soft, fluffy roll texture and let dough double in size completely.
