Banana Cream Cheese Muffins will make your breakfast pop with creamy, tangy goodness that brings comfort right to your morning plate. Packed with ripe bananas and smooth cream cheese, these muffins deliver a delightful twist on your classic breakfast treat.

Ingredients

Scale

Muffin Base:

  • 2 ripe bananas, mashed
  • 1 ½ cups all-purpose flour
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 egg
  • ⅓ cup melted butter or coconut oil
  • ¼ cup milk
  • 1 teaspoon vanilla extract

Leavening Agents:

  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt

Cream Cheese Filling:

  • 4 ounces cream cheese, softened
  • 2 tablespoons granulated sugar
  • ½ teaspoon vanilla extract

Instructions

  1. Thoroughly mash 2 ripe bananas in a large mixing bowl until no lumps remain.
  2. Whisk 1 ½ cups flour, 1 tsp baking soda, ½ tsp baking powder, ½ tsp cinnamon, and ¼ tsp salt together in a separate bowl.
  3. Mix ½ cup brown sugar, ¼ cup granulated sugar, 1 egg, ⅓ cup melted butter, 1 tsp vanilla extract, and ¼ cup milk into the mashed bananas.
  4. Fold dry ingredients into banana mixture gently, stopping when ingredients are just combined.
  5. Blend 4 oz softened cream cheese, 2 tbsp sugar, and ½ tsp vanilla extract until completely smooth.
  6. Place paper liners in a 12-cup muffin tin.
  7. Fill each muffin liner halfway with banana batter.
  8. Drop 1 teaspoon of cream cheese filling into the center of each partially filled liner.
  9. Cover cream cheese with remaining banana batter, filling each cup about ¾ full.
  10. Bake at 350°F for 20 minutes, checking for golden brown edges.
  11. Remove muffins from oven and let cool in tin for 10 minutes before transferring to a wire rack.

Notes

  • Ripe bananas are key to achieving the most intense banana flavor, so choose bananas with plenty of brown spots.
  • When folding dry ingredients into wet mixture, use a gentle hand to prevent tough muffins and maintain a light, tender texture.
  • For a gluten-free version, swap all-purpose flour with a 1:1 gluten-free baking blend that contains xanthan gum.
  • To create a swirled cream cheese effect, use a toothpick to gently drag the cream cheese filling through the batter before baking.
