Instructions

  1. Crush ⅓ cup freeze-dried blueberries into fine powder using a rolling pin inside a sealed zip-top bag.
  2. Melt 1 cup white chocolate chips, 1 tbsp butter, and 4 oz cream cheese in a saucepan over low heat at 200°F, stirring continuously until smooth.
  3. Remove melted mixture from heat and incorporate 2 tbsp fresh lemon juice, 1 tsp lemon zest, 1 tsp vanilla extract, and ¼ tsp salt until thoroughly blended.
  4. Pour warm cheesecake mixture over 6 cups Rice Chex cereal in a large mixing bowl, carefully folding with a spatula to ensure complete and even coating.
  5. Transfer coated cereal into a gallon-sized zip-top bag and add 1 cup powdered sugar and crushed blueberry powder.
  6. Seal the bag and vigorously shake for 30-45 seconds until your cereal is completely dry and uniformly coated.
  7. Spread coated mixture onto a baking sheet and let cool at room temperature for 10 minutes to set the coating.
