Instructions
- Remove the fillo pastry from refrigeration, allowing it to warm to room temperature while still sealed in its original packaging.
- Preheat your oven to 375°F, positioning the rack in the center. Generously coat a 24cm x 34cm rectangular baking pan with 2 tablespoons melted butter using a pastry brush.
- Crack 2 whole eggs into a mixing jug. Pour 1 cup thickened cream into the same container. Season with a pinch of salt and a dash of black pepper. Whisk the mixture until completely smooth and uniform.
- Spread two fillo sheets on your clean work surface, aligning the shorter edges toward you. Carefully fold the sheets into accordion-like pleats using your fingertips. Transfer the folded sheets to the prepared baking pan.
- Continue folding and layering remaining fillo sheets until the entire pan is covered with pastry. Ensure each layer receives a light brushing of the remaining melted butter.
- Distribute 500g sliced double brie cheese between the pastry layers. Gently tuck 6 thinly sliced fresh figs around the cheese sections.
- Slowly pour the egg and cream mixture across the entire pastry surface, ensuring even distribution. Sprinkle 3 sprigs of fresh thyme leaves over the top.
- Slide the pan into the preheated 375°F oven. Bake for 35 minutes, watching for a golden-brown, crispy pastry top.
- Remove from the oven and let rest for 5 minutes before serving to allow the layers to settle and cool slightly.
