Description

S’mores Cookie Bars bring campfire memories straight to my kitchen, melting chocolate and marshmallows between buttery graham cracker layers that remind me of summer nights. These gooey treats come together faster than roasting marshmallows over an open flame, delivering pure nostalgic comfort in each delicious square.

Ingredients

Scale

Main Ingredients:

  • 1.5 cups (270g) milk chocolate chips or bars
  • 2 cups (100g) mini marshmallows
  • 1 large egg

Dry Ingredients:

  • 1.25 cups (180g) graham cracker crumbs
  • 1.25 cups (160g) all-purpose flour
  • 0.5 cup (100g) brown sugar, packed
  • 0.25 cup (50g) granulated sugar
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt

Wet Ingredients:

  • 1 cup (230g) unsalted butter, melted and softened
  • 1 teaspoon vanilla extract

Instructions

  1. Grab a 9×13-inch baking pan and line it with parchment paper. Heat your oven to precisely 350°F (177°C) so it’s ready for baking.
  2. Combine 1½ cups (180g) graham cracker crumbs, ½ cup (115g) melted unsalted butter, and ¼ cup (50g) granulated sugar in a mixing bowl. Press this mixture firmly into the bottom of your prepared pan.
  3. Whisk together 1¼ cups (160g) all-purpose flour, 1 teaspoon baking powder, and ¼ teaspoon salt in a separate bowl until completely blended.
  4. In another bowl, cream ½ cup (115g) softened unsalted butter with ½ cup (100g) packed brown sugar until smooth. Add 1 large egg and 1 teaspoon vanilla extract, mixing thoroughly.
  5. Gently fold the dry flour mixture into your butter mixture, creating a soft cookie dough. Don’t overmix the batter.
  6. Sprinkle 1½ cups (270g) milk chocolate chips evenly across the graham cracker crust.
  7. Distribute 2 cups (100g) mini marshmallows over the chocolate layer.
  8. Drop spoonfuls of cookie dough across the marshmallows, leaving some marshmallows peeking through the surface.
  9. Slide the pan into the preheated oven and bake for 25-30 minutes, watching for a golden-brown top.
  10. Remove from oven and let the bars cool completely in the pan before cutting into squares.

Notes

  • Ensure graham crackers are finely crushed for a smooth, compact crust that holds together perfectly.
  • Room temperature butter creams easier and creates a more consistent cookie dough texture.
  • Partially cover marshmallows with cookie dough to create pockets of gooey marshmallow surprise in each bite.
  • Allow bars to cool completely before cutting to help them set and prevent messy, falling-apart slices.
