Instructions

  2. Sift 2 cups flour, 2 teaspoons baking powder, ¾ teaspoon salt, 1 ½ teaspoons cinnamon, and ¾ teaspoon nutmeg into a medium bowl. Whisk these dry ingredients until completely combined.
  3. In a separate large bowl, blend 1 cup vegetable oil, ½ cup brown sugar, and 1 cup granulated sugar until smooth. Crack 3 room-temperature eggs one at a time, mixing completely after each addition.
  4. Pour vanilla extract into the wet mixture. Gradually fold dry ingredients into wet ingredients, stirring until just incorporated. Gently mix in the spiced apple chunks.
