Instructions

  1. Prepare a 9×13-inch baking pan by lining it with foil, ensuring extra foil hangs over the sides. Arrange 40 club crackers across the bottom, trimming them to fit perfectly.
  2. Combine 1 cup butter, 2 cups graham cracker crumbs, 1 cup brown sugar, ½ cup milk, and ⅓ cup sugar in a saucepan. Heat to a rolling boil at medium temperature for exactly 5 minutes, stirring continuously.
  3. Pour half of the caramel mixture carefully over the first cracker layer, spreading evenly with a spatula. Add another complete layer of 40 club crackers on top.
  4. Drizzle the remaining caramel mixture across the second cracker layer, ensuring complete and uniform coverage.
  5. Melt ⅔ cup peanut butter, ½ cup chocolate chips, and ½ cup butterscotch chips in a saucepan over low heat at 200°F, stirring until smooth and fully incorporated.
  6. Pour the melted chip mixture over the top cracker layer, spreading gently to create an even chocolate coating.
  7. Refrigerate the entire pan for 60 minutes until the bars are completely set and firm to the touch.
