Instructions

  3. Chop 6 oz of bittersweet chocolate into small, uniform pieces. Measure ½ cup ghee.
  4. Melt chocolate and ghee together in microwave, stirring every 10-15 seconds until completely smooth and glossy.
  5. Whisk ¼ cup almond flour, ½ cup maple sugar, and ⅛ teaspoon sea salt in a separate bowl.
  6. Crack 2 large eggs and 2 egg yolks into another bowl. Whisk until completely blended and uniform in color.
  7. Fold dry ingredients and whisked eggs into melted chocolate mixture. Stir until batter becomes thick and completely incorporated.
  8. Divide batter evenly among 4 ramekins, filling each about 75% full. Place ramekins on a single baking sheet.
  9. Bake at 425°F for exactly 13 minutes. Your cakes should have set edges but remain soft in the center.
  10. Remove from oven and let rest 1 minute in ramekins. Gently run a knife around edges to loosen.
