Instructions

  4. Using an electric mixer, beat 4 egg whites with ⅛ tsp salt until soft peaks form.
  5. Gradually add remaining 3 tbsp sugar to egg whites. Whip until glossy and firm peaks develop.
  6. Gently fold ⅓ of the egg whites into the chocolate mixture using a wide rubber spatula.
  7. Incorporate the remaining egg whites in two batches, folding carefully until no white streaks remain.
  8. Transfer the batter to the prepared pan, spreading evenly.
  9. Bake for 30-35 minutes until the cake puffs up and feels slightly firm in the center. Avoid over-baking.
  10. Remove from the oven and let the cake cool completely in the pan. The cake will naturally collapse as it cools, which is expected.
