Description

Grandma’s old fashioned custard pie comes straight from her cherished recipe box, delivering pure comfort with its silky smooth filling and flaky golden crust that whispers sweet memories of family gatherings.

Ingredients

Scale

Custard Base:

  • 5 large eggs
  • 1 cup cream
  • 1.5 cups whole milk
  • ½ cup sugar

Supporting Ingredients:

  • ½ cup unsweetened coconut
  • 1 gluten-free pie crust

Seasonings:

  • 1 pinch nutmeg

Instructions

  1. Heat your oven to 375°F. Blind bake your pie crust for 15 minutes, ensuring the bottom becomes golden and crisp.
  2. Whisk ½ cup sugar, 5 large eggs, 1 cup cream, 1.5 cups whole milk, and a pinch of nutmeg in a large mixing bowl until completely smooth.
  3. Scatter ¼ cup unsweetened coconut across the bottom of your pre-baked pie shell, creating an even layer.
  4. Gently strain the custard mixture through a fine-mesh sieve directly into the pie shell, filling it almost to the rim.
  5. Sprinkle the remaining ¼ cup coconut across the top of the custard, then dust with an extra pinch of nutmeg.
  6. Place the pie in the 375°F oven for 15 minutes, then reduce temperature to 325°F and continue baking for 30 minutes.
  7. Check doneness by inserting a knife near the center – it should come out clean with just a slight wobble in the middle.
  8. Remove from oven and let cool completely at room temperature, which will help the custard set perfectly.
  9. Serve chilled or at room temperature, depending on your preference.

Notes

  • Toasting coconut beforehand adds a deeper, nuttier flavor that enhances the custard’s richness.
  • Straining the custard mixture ensures a silky smooth texture without any egg lumps or streaks.
  • Placing the pie on the lower oven rack helps prevent the crust from burning while allowing the custard to set perfectly.
  • For a dairy-free version, swap heavy cream with coconut milk and use a plant-based milk alternative to create a similar creamy consistency.
