Instructions

- Whisk 2 ¼ cups cake flour, 2 teaspoons baking powder, ¼ teaspoon baking soda, and ½ teaspoon salt in a medium bowl.
- Cream ½ cup butter, ¼ cup cookie butter, 1 ⅓ cups granulated sugar, and ¼ cup brown sugar in a large bowl for 2-3 minutes until fluffy.
- Beat in 3 large eggs one at a time. Stir in 1 tablespoon vanilla extract.
- Mix ¾ cup sour cream into the batter until smooth.
- Alternate adding dry ingredients and ½ cup milk to the batter, starting and ending with dry ingredients.
- Divide batter evenly between prepared pans. Bake at 350°F for 28-32 minutes until a toothpick comes out clean.
- Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
- Beat 1 cup butter and ½ cup cookie butter for 2-3 minutes until smooth.
- Add 1 teaspoon vanilla and ¼ teaspoon salt to buttercream.
- Gradually mix in 3 ½ cups powdered sugar.
- Add 2 tablespoons heavy cream and mix until creamy.
- Level cake layers if needed. Place first layer on serving plate.
- Spread buttercream between each cake layer.
- Frost entire cake exterior smoothly with an offset spatula.
- Decorate top and sides with crushed Biscoff cookies.
- Optional: Drizzle warmed cookie butter over the cake.
