Ingredients

Scale

Main Ingredients:

  • 2 (8-ounce) blocks cream cheese
  • 1 (17.5 ounce) pouch sugar cookie mix
  • 1 (3.5 ounce) box instant French vanilla pudding mix

Supporting Ingredients:

  • ½ cup unsalted butter
  • ½ cup sour cream
  • ½ cup granulated sugar

Finishing Ingredients:

  • ½ cup toffee bits
  • 3 large egg yolks
  • 2 large eggs
  • 2 tablespoons light brown sugar
  • 2 teaspoons vanilla extract

Instructions

  1. Warm your oven to 350°F and line a 9×13-inch pan with foil, then spray with nonstick cooking spray.
  2. Mix 17.5 ounces sugar cookie mix, 3.5 ounces vanilla pudding mix, ½ cup melted butter, 1 egg, 2 tablespoons brown sugar, and 2 teaspoons vanilla until a thick dough forms.
  3. Press the crust dough firmly and evenly across the entire pan bottom, creating a smooth base.
  4. Beat 2 blocks of softened cream cheese, 1 egg, 3 egg yolks, ½ cup sour cream, ½ cup granulated sugar, and 2 teaspoons vanilla with an electric mixer until completely smooth.
  5. Carefully pour the cheesecake mixture over the prepared crust, using a spatula to spread it evenly.
  6. Bake at 350°F for 40-45 minutes, checking at 30 minutes until the center is set and doesn’t jiggle when gently shaken.
  7. Immediately scatter ½ cup toffee bits across the top after removing from the oven.
  8. Allow the bars to cool at room temperature for 30 minutes.
  9. Refrigerate for a minimum of 3 hours until thoroughly chilled before cutting into bars.
  10. Store your completed dessert in an airtight container in the refrigerator for up to one week.

Notes

  • Use room temperature cream cheese for a smooth, lump-free filling that blends perfectly with other ingredients.
  • Check the bars early and often during baking to prevent overcooking, which can make the cheesecake dry and cracked.
  • For clean slices, run a sharp knife under hot water and wipe dry between each cut to create neat, precise edges.
  • Swap sugar cookie mix with graham cracker crumbs for a classic cheesecake base if preferred, keeping the same measurements.
