- Mix 250g flour, 50g diced butter, 7g yeast, 3 tbsp sugar, 100ml milk, and 1 egg in a large bowl. Knead the mixture for 8-10 minutes until your dough becomes silky and elastic.
- Cover the dough with a clean kitchen towel and let it rest in a warm spot for 60-75 minutes, allowing it to rise and double in size.
- Punch down the dough and divide it into 8 equal portions. Flatten each portion into a small circle about 3 inches wide.
- Spoon 2 tablespoons of cold custard into the center of each dough circle. Carefully fold and pinch edges to seal the filling completely.
- Heat sunflower oil in a deep fryer or heavy pot to 350°F. Carefully lower each stuffed dough portion into the hot oil.
- Fry each doughnut for 2-3 minutes per side until they turn deep golden brown. Remove with a slotted spoon and drain on paper towels.
- While doughnuts are still warm, roll them generously in the remaining 200g of sugar, ensuring a complete and even coating.
- Let the sugar-coated doughnuts rest for 2-3 minutes to allow the sugar to set and create a delicate, crisp exterior.
