Instructions

- Divide dough into two equal portions, shape into flat discs, wrap in plastic, and refrigerate for 1 hour.
- Peel and slice 6 medium apples into ¼-inch thick pieces, ensuring uniform cuts for even cooking.
- Toss apple slices with ¾ cup sugar, 2 tablespoons flour, cinnamon, nutmeg, salt, lemon juice, and lemon zest until evenly coated.
- Roll out one dough disc to a 12-inch circle on a floured surface, carefully transferring to a 9-inch pie dish.
- Spread apple mixture into the bottom crust, dotting with 1 tablespoon cold butter pieces.
- Roll out second dough disc and cut into strips for a lattice top, or place whole disc over filling and cut vents.
- Trim excess dough, crimp edges, and brush with egg wash if desired.
