  • 300 grams mixed berries (raspberries, blueberries, blackberries)

Instructions

  1. Preheat your oven to 350°F (180°C) and set up the rack in the center position.
  2. Mix 200 grams of crushed digestive biscuits with 100 grams melted butter until the mixture resembles wet sand.
  3. Press the crumb mixture firmly into the bottom of a 9-inch springform pan, creating an even layer.
  4. Bake the crust for exactly 10 minutes, then remove and allow it to cool completely at room temperature.
  5. In a large mixing bowl, beat 500 grams softened cream cheese until completely smooth and creamy.
  6. Gradually add 150 grams granulated sugar to the cream cheese, mixing until fully incorporated.
  7. Add 3 large eggs one at a time, blending thoroughly after each addition.
  8. Stir in 1 teaspoon vanilla extract and 2 tablespoons lemon juice until the mixture is uniform.
  9. Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.
  10. Bake at 350°F (180°C) for 50-60 minutes, checking that edges are set but center still has a slight wobble.
  11. Turn off the oven and leave the cheesecake inside with the door closed for 1 hour to prevent cracking.
  12. Remove from oven and refrigerate for minimum 4 hours or overnight until completely chilled.
  13. Before serving, arrange 300 grams mixed berries attractively across the top of the cheesecake.
