Description

Fruity Pebbles Breakfast Bread brings childhood nostalgia straight to your breakfast table with a colorful twist on classic quick bread. Packed with crunchy cereal and sweet memories, this playful recipe turns an ordinary morning into a delightful celebration of flavor and fun.

Ingredients

Scale

Primary Ingredients:

  • 2 cups (240g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • ½ cup (113g) unsalted butter
  • ½ cup (120g) sour cream

Cereal Ingredients:

  • 1 cup Fruity Pebbles cereal
  • Additional Fruity Pebbles for topping

Leavening and Seasoning Ingredients:

  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ cup (120 milliliters) milk

Instructions

  1. Preheat the oven to 350°F (175°C). Thoroughly coat a 9×5-inch loaf pan with butter or line it with parchment paper.
  2. Combine 2 cups (240g) flour, 1 teaspoon baking soda, and ¼ teaspoon salt in a medium mixing bowl. Whisk until evenly blended.
  3. Use an electric mixer to cream ½ cup (113g) softened butter with 1 cup (200g) sugar until the mixture becomes pale and fluffy, approximately 2-3 minutes.
  4. Incorporate 2 large eggs into the butter mixture one at a time, thoroughly mixing after each egg. Blend in 1 teaspoon vanilla extract.
  5. Fold ½ cup (120g) sour cream and ½ cup (120ml) milk into the mixture. The texture might appear slightly curdled, which is completely normal.
  6. Gradually add the dry flour mixture to the wet ingredients, stirring until just combined. Do not overmix the batter.
  7. Gently fold 1 cup of Fruity Pebbles cereal into the batter, ensuring even distribution.
  8. Transfer the batter to the prepared loaf pan. Smooth the surface and generously sprinkle additional Fruity Pebbles across the top.
  9. Place the pan in the preheated oven and bake for 50-60 minutes. Check doneness by inserting a toothpick into the center—it should come out clean.
  10. Remove from oven and allow the bread to rest in the pan for 10 minutes. Carefully transfer to a wire rack and let cool completely before slicing.

Notes

  • Ensure butter is at room temperature for the smoothest mixing and fluffiest texture.
  • Don’t overmix the batter, which can make the bread tough and dense.
  • If baking for someone with gluten sensitivity, swap the flour for a gluten-free blend that measures cup-for-cup.
  • Save extra Fruity Pebbles for a colorful garnish right before serving to maintain their crunch.
