Instructions
- Create your sourdough starter by mixing 3 grams fresh yeast, 90 grams lukewarm water, and 140 grams flour in a bowl. Cover and let the mixture rise in a warm spot for 1 hour until it doubles in volume.
- Transfer your sourdough mixture to a bread maker pan. Add 15 grams milk, 3 egg yolks, 30 grams sugar, 20 grams fresh yeast, 125 grams flour, and a pinch of salt. Select the kneading program.
- Add 30 grams butter 10 minutes into the kneading process. Once complete, move your dough to a greased bowl and let it rise for 1 hour until doubled in size.
- Deflate the dough gently and divide it into 11 equal portions. Shape each piece into a ball with a center hole. Place donuts on baking paper and allow them to rise for 30 minutes.
- Heat oil to 350°F for frying. Carefully lower donuts into the hot oil and cook until they turn golden brown, approximately 2-3 minutes per side.
- Remove donuts with a slotted spoon and drain excess oil on absorbent paper towels.
- Prepare chocolate coating by combining 100 grams couverture chocolate, 1 teaspoon butter, 3 tablespoons milk, and 50 grams icing sugar in a deep plate.
- Microwave the chocolate mixture for 1 minute at 50% power. Stir thoroughly and heat for an additional 2 minutes if needed, stirring between intervals.
- Dip each cooled donut into the melted chocolate mixture, ensuring complete coverage. Place on a wire rack to let excess chocolate drip off.
- Allow chocolate to set at room temperature for 15-20 minutes before serving your homemade chocolate-covered donuts.
