Chocolate covered donuts bring pure joy straight from your kitchen to the table! Crispy, golden donuts drenched in rich chocolate make breakfast or dessert feel like a special celebration.

Ingredients

Scale

Primary Ingredients:

  • 140 grams flour
  • 125 grams flour
  • 3 egg yolks
  • 100 grams couverture chocolate

Supporting Ingredients:

  • 90 grams lukewarm water
  • 15 grams milk
  • 3 grams fresh yeast
  • 20 grams fresh yeast
  • 30 grams sugar
  • 30 grams butter
  • 1 teaspoon butter
  • 3 tablespoons milk
  • 50 grams icing sugar

Finishing Ingredients:

  • 1 pinch salt

Instructions

  1. Create your sourdough starter by mixing 3 grams fresh yeast, 90 grams lukewarm water, and 140 grams flour in a bowl. Cover and let the mixture rise in a warm spot for 1 hour until it doubles in volume.
  2. Transfer your sourdough mixture to a bread maker pan. Add 15 grams milk, 3 egg yolks, 30 grams sugar, 20 grams fresh yeast, 125 grams flour, and a pinch of salt. Select the kneading program.
  3. Add 30 grams butter 10 minutes into the kneading process. Once complete, move your dough to a greased bowl and let it rise for 1 hour until doubled in size.
  4. Deflate the dough gently and divide it into 11 equal portions. Shape each piece into a ball with a center hole. Place donuts on baking paper and allow them to rise for 30 minutes.
  5. Heat oil to 350°F for frying. Carefully lower donuts into the hot oil and cook until they turn golden brown, approximately 2-3 minutes per side.
  6. Remove donuts with a slotted spoon and drain excess oil on absorbent paper towels.
  7. Prepare chocolate coating by combining 100 grams couverture chocolate, 1 teaspoon butter, 3 tablespoons milk, and 50 grams icing sugar in a deep plate.
  8. Microwave the chocolate mixture for 1 minute at 50% power. Stir thoroughly and heat for an additional 2 minutes if needed, stirring between intervals.
  9. Dip each cooled donut into the melted chocolate mixture, ensuring complete coverage. Place on a wire rack to let excess chocolate drip off.
  10. Allow chocolate to set at room temperature for 15-20 minutes before serving your homemade chocolate-covered donuts.

Notes

  • Always use a food thermometer to ensure the oil is at 350-375°F for perfect frying, preventing greasy or undercooked donuts.
  • Let the sourdough rise in a draft-free spot like a turned-off oven with the light on to maintain consistent warm temperature.
  • When shaping donuts, dust your hands with flour to prevent sticky dough from clinging and make forming easier.
  • For gluten-free adaptation, replace wheat flour with a cup-for-cup gluten-free blend and add 1 teaspoon of xanthan gum for better texture.
