Description

Fresh lava bread brings Turkish street charm straight to your kitchen, creating pillowy flatbread that sizzles with authentic flavor and connects you directly to traditional cooking techniques.

Ingredients

Scale

Main Ingredients:

  • 3.5 cups all-purpose flour
  • 1 cup warm water
  • 0.5 cup plain yogurt

Leavening and Seasoning Ingredients:

  • 2 teaspoons instant yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt

Supporting Ingredients:

  • 1 tablespoon olive oil

Optional Toppings:

  • melted butter
  • chopped parsley
  • zaatar

Instructions

  1. Activate the yeast by combining ½ cup warm water, 1 tbsp sugar, and 2 tsp instant yeast in a large mixing bowl. Allow the mixture to become frothy for 5-10 minutes.
  2. Pour in ½ cup plain yogurt, 1 tbsp olive oil, and 1 tsp salt into the yeast mixture. Stir thoroughly to integrate all ingredients.
  3. Gradually incorporate 3 ½ cups all-purpose flour into the wet ingredients. Mix until a soft, cohesive dough develops.
  4. Transfer the dough onto a clean surface and knead vigorously for 8-10 minutes. Ensure your dough becomes smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover with a kitchen towel, and let it rise in a warm spot for 30-45 minutes until it doubles in volume.
  6. Deflate the dough by gently pressing down. Divide it into 6 equal portions and shape each into a round ball.
  7. Allow the dough balls to rest for 10 minutes. Roll each one into a thin circle approximately ¼ inch thick on a floured surface.
  8. Preheat a dry skillet to medium-high heat (around 375°F). No additional oil is needed in the pan.
  9. Cook each dough round for 1-2 minutes per side. Look for golden spots and puffy air bubbles as indicators of perfect cooking.
  10. Transfer cooked flatbreads to a covered plate to retain warmth. Optional: brush with melted butter or sprinkle with chopped parsley.

Notes

  • Let the yeast mixture get foamy to activate the bread’s rise and ensure a soft, puffy texture.
  • Rest the dough balls for 10 minutes to relax the gluten and make rolling easier.
  • Use a dry, hot skillet to create those delightful golden bubbles that make this flatbread special.
  • Brush with melted butter or olive oil after cooking to add extra flavor and keep the bread moist.
