Instructions

  1. Heat your oven to exactly 350º with the rack in the center position.

  6. In a separate bowl, sift together 2 tbsp oat fiber, 1 tbsp coconut flour, 1 tbsp protein powder, ½ tsp baking powder, and ½ tsp glucomannan powder.
  7. Blend 2 tbsp heavy cream and 2 tbsp water into the dry ingredients until a thick batter forms, adding extra cream if mixture seems too dry.
  8. Divide simmered fruit evenly between two small baking dishes, keeping fruit away from dish edges.
  9. Carefully spoon batter over fruit, ensuring minimal contact with baking dish sides.
