Instructions

  1. Combine 500 grams flour, a pinch of salt, and 90 grams powdered sugar in a large mixing bowl. Thoroughly blend the dry ingredients until they’re evenly distributed.
  2. Add 200 grams softened iberic pork lard and 125 ml white wine to the dry mixture. Knead the ingredients with your hands until a smooth, cohesive dough ball forms.
  3. Sprinkle powdered sugar on your work surface instead of flour to prevent the dough from becoming tough. Roll out the dough to about ¼-inch thickness.
  4. Use a cookie cutter or glass rim to cut circular shapes from the rolled dough. Since these cookies don’t rise much, ensure the thickness remains consistent.
  5. Preheat your oven to 400°F (200°C). Arrange the cut cookie circles on a baking sheet lined with parchment paper.
  6. Bake the cookies for 22 minutes, checking at the 20-minute mark to prevent over-browning. Oven temperatures can vary, so watch them carefully.
  7. Remove the cookies from the oven while they’re still warm. Immediately roll each cookie in extra powdered sugar, coating them completely.
