Instructions
- Combine 500 grams flour, a pinch of salt, and 90 grams powdered sugar in a large mixing bowl. Thoroughly blend the dry ingredients until they’re evenly distributed.
- Add 200 grams softened iberic pork lard and 125 ml white wine to the dry mixture. Knead the ingredients with your hands until a smooth, cohesive dough ball forms.
- Sprinkle powdered sugar on your work surface instead of flour to prevent the dough from becoming tough. Roll out the dough to about ¼-inch thickness.
- Use a cookie cutter or glass rim to cut circular shapes from the rolled dough. Since these cookies don’t rise much, ensure the thickness remains consistent.
- Preheat your oven to 400°F (200°C). Arrange the cut cookie circles on a baking sheet lined with parchment paper.
- Bake the cookies for 22 minutes, checking at the 20-minute mark to prevent over-browning. Oven temperatures can vary, so watch them carefully.
- Remove the cookies from the oven while they’re still warm. Immediately roll each cookie in extra powdered sugar, coating them completely.
