Ingredients
Scale
Blondies Base:
- 2 cups dark brown sugar
- 2 ½ cups all-purpose flour
- 2 eggs
- ⅔ cup butter
- 2 cups chopped pecans
Baking Essentials:
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- 2 teaspoons vanilla extract
- Pinch salt
Filling:
- 2 eggs
- ½ cup dark brown sugar
- ½ cup light corn syrup
- 2 tablespoons butter
- 1 teaspoon vanilla
- 6 miniature pecan pie tartlets
Instructions
- Preheat oven to 350°F. Line a 9×9-inch pan with foil, extending over sides. Thoroughly coat foil with cooking spray.
- Beat ⅔ cup butter and 2 cups dark brown sugar using an electric mixer on medium speed until creamy.
- Add 2 tsp vanilla and 2 eggs to butter mixture, mixing until smooth.
- Gently fold in 1 tsp baking powder, ¼ tsp baking soda, pinch of salt, and 2½ cups flour to create a thick batter.
- Mix in 1 cup chopped pecans and 6 miniature pecan pie tartlets (or ½ prepared pecan pie) into batter.
- Spread batter evenly in prepared pan. Bake for 10 minutes at 350°F.
- Whisk 2 Tbsp butter, 2 lightly beaten eggs, ½ cup dark brown sugar, ½ cup corn syrup, and 1 tsp vanilla in a separate bowl.
- Stir remaining 1 cup pecans into filling mixture.
- Pour filling evenly over par-baked blondies. Return to oven for 15-20 minutes at 350°F.
- Remove when top is golden and slightly jiggly in center. Do not overbake.
- Allow blondies to cool completely before cutting into squares.
Notes
- Check pecan freshness before chopping, as rancid nuts can ruin the entire batch.
- Use dark brown sugar for deeper caramel flavor and richer texture in the blondies.
- Always line the pan with foil and grease thoroughly to ensure easy removal and clean cutting of blondies.
- Remove blondies from oven when center is slightly jiggly, as they will continue setting while cooling and prevent dry, overbaked texture.
