Description

Raspberry jam oat bars are the perfect treat for satisfying your sweet tooth with minimal effort. Crumbly oat layers and rich raspberry filling combine to create a delightful dessert that disappears faster than you can slice them.

Ingredients

Scale

Base Ingredients:

  • 2 cups rolled oats
  • 1 ½ cups all-purpose flour
  • 1 cup unsalted butter
  • ¾ cup light brown sugar
  • ½ cup granulated sugar

Flavor and Binding Ingredients:

  • 1 ½ cups raspberry jam

Seasoning Ingredients:

  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon lemon juice

Instructions

  1. Mix 2 cups rolled oats, 1 ½ cups flour, 1 cup brown and granulated sugar, 1 teaspoon baking soda, and ½ teaspoon salt together in a spacious mixing bowl.
  2. Slice 2 sticks of cold butter into small cubes. Work the butter into the dry ingredients using your fingertips until the mixture looks like coarse, bumpy breadcrumbs.
  3. Prepare a 9×13 inch baking pan by spraying with cooking spray. Heat the oven to 375F.
  4. Press approximately 3 cups of the crumbly mixture firmly into the bottom of the prepared pan, creating an even base layer.
  5. Stir 1 ½ cups raspberry jam with 1 tablespoon lemon juice in a small bowl until smooth.
  6. Spread the jam mixture carefully across the pressed oat base, ensuring complete and even coverage.
  7. Scatter the remaining crumb mixture loosely over the jam layer, allowing some jam to peek through.
  8. Slide the pan into the 375F oven and bake for 32-35 minutes until the top turns golden brown and jam bubbles around the edges.
  9. Remove from the oven and allow the bars to cool completely at room temperature for 2-3 hours before slicing.
  10. Cut into square or rectangular pieces using a sharp knife. Store in an airtight container at room temperature.

Notes

  • Use fresh, high-quality raspberry jam for the best flavor and most vibrant results in your bars.
  • Make sure butter is cold when cutting into the dry ingredients to create a flakier, more tender crumb texture.
  • For gluten-free options, swap all-purpose flour with a cup-for-cup gluten-free flour blend that contains xanthan gum.
  • Allow bars to cool completely before cutting to help them set properly and prevent crumbling when slicing.
