Instructions
- Mix 2 cups rolled oats, 1 ½ cups flour, 1 cup brown and granulated sugar, 1 teaspoon baking soda, and ½ teaspoon salt together in a spacious mixing bowl.
- Slice 2 sticks of cold butter into small cubes. Work the butter into the dry ingredients using your fingertips until the mixture looks like coarse, bumpy breadcrumbs.
- Prepare a 9×13 inch baking pan by spraying with cooking spray. Heat the oven to 375F.
- Press approximately 3 cups of the crumbly mixture firmly into the bottom of the prepared pan, creating an even base layer.
- Stir 1 ½ cups raspberry jam with 1 tablespoon lemon juice in a small bowl until smooth.
- Spread the jam mixture carefully across the pressed oat base, ensuring complete and even coverage.
- Scatter the remaining crumb mixture loosely over the jam layer, allowing some jam to peek through.
- Slide the pan into the 375F oven and bake for 32-35 minutes until the top turns golden brown and jam bubbles around the edges.
- Remove from the oven and allow the bars to cool completely at room temperature for 2-3 hours before slicing.
- Cut into square or rectangular pieces using a sharp knife. Store in an airtight container at room temperature.
