  6. Gently fold in 3 large eggs, mixing just until incorporated.
  7. Divide the cheesecake batter into three equal bowls. Color two bowls with red and blue gel food coloring.
  8. Spoon the colored batters alternately over the cooled crust, creating a layered pattern.
  9. Drag a butter knife through the batter vertically and horizontally to create a swirled design. Avoid overmixing.
  10. Place the pan on the oven rack above the water-filled baking sheet. Bake at 325°F for 45-50 minutes.
