Description

Salted honey pie brings together sweet and salty notes in a creamy, delightful dessert that will make your taste buds dance. Buttery crust and rich honey filling create a simple yet elegant treat perfect for sharing with friends and family.

Ingredients

Scale

Main Ingredients:

  • 3 large eggs
  • ½ cup honey
  • ½ cup heavy cream
  • ½ cup unsalted butter, melted and cooled
  • ¾ cup granulated sugar

Supporting Ingredients:

  • 1 ¼ cups all-purpose flour
  • ½ cup cold unsalted butter, cubed
  • ¼ cup cornmeal
  • 2 teaspoons white vinegar

Finishing Ingredients:

  • ½ teaspoon salt
  • ¼ teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 3 to 4 tablespoons ice water
  • Flaky sea salt

Instructions

  1. Mix 1¼ cups flour and ½ teaspoon salt in a large bowl. Cut ½ cup cold butter into small cubes until the mixture looks like rough breadcrumbs.
  2. Drizzle 3-4 tablespoons ice water into the flour mixture. Gently knead until the dough just comes together. Shape into a flat disk and refrigerate for 30 minutes.
  3. Warm your oven to 350°F. Roll the chilled dough into a 12-inch circular shape and carefully transfer to a 9-inch pie dish. Trim the edges and create a decorative crimp.
  4. Refrigerate the pie crust for another 10 minutes. Line the crust with parchment paper and fill with pie weights. Bake at 350°F for 15 minutes.
  5. Remove the weights and return the crust to the oven. Bake for an additional 5 minutes until lightly golden. Allow to cool slightly.
  6. Whisk ½ cup melted butter, ¾ cup sugar, ¼ cup cornmeal, and ¼ teaspoon salt in a mixing bowl until smooth.
  7. Add 3 large eggs one at a time, mixing thoroughly after each addition.
  8. Stir in ½ cup heavy cream, ½ cup honey, 2 teaspoons vinegar, and 1 teaspoon vanilla until the filling is completely combined.
  9. Pour the filling into the pre-baked pie crust. Bake at 350°F for 45-50 minutes until the center is set but still slightly wobbly.
  10. Protect the crust edges with aluminum foil if they start to brown too quickly.
  11. Cool the pie completely on a wire rack at room temperature.
  12. Sprinkle flaky sea salt across the top just before serving. Enjoy at room temperature or chilled.

Notes

  • A flaky, perfectly chilled pie crust makes all the difference, so resist rushing the chilling steps and keep everything cold while working.
  • Using high-quality honey transforms this dessert, so select a rich, complex local honey for maximum flavor depth.
  • Cornmeal adds wonderful texture, creating a slightly grainy background that complements the smooth honey filling beautifully.
  • When checking doneness, the center should wobble like soft custard but not look liquid, which ensures a silky, tender final texture.
