Ingredients
Scale
Main Ingredients:
- 3 ½ cups all-purpose flour (420g)
- ½ cup sweetened condensed milk (120ml)
- ½ cup warm milk (120ml)
- 1 large egg
Supportive Ingredients:
- ¼ cup granulated sugar (50g)
- ¼ cup unsalted butter, softened (60g)
- ½ teaspoon salt
Activation Ingredients:
- 2 ¼ teaspoons active dry yeast (1 packet)
- ¼ cup warm water (about 110F / 45C)
Instructions
- Dissolve 2 ¼ teaspoons active dry yeast in ¼ cup warm water (110F/45C). Allow the mixture to foam for 5 minutes, confirming the yeast’s activation.
- Combine 3 ½ cups all-purpose flour, ¼ cup granulated sugar, and ½ teaspoon salt in a large mixing bowl. Create a center well for wet ingredients.
- Pour the yeast mixture, ½ cup warm milk, ½ cup sweetened condensed milk, 1 large egg, and ¼ cup softened butter into the flour well. Mix until a sticky dough forms.
- Knead the dough for 7 minutes using a stand mixer with a dough hook, or 10 minutes by hand on a floured surface until smooth and elastic.
- Transfer the dough to a greased bowl. Cover with plastic wrap and let rise in a warm location for 1-1.5 hours until doubled in size.
- Punch down the risen dough and divide into 12 equal portions. Roll each piece into a smooth ball.
- Arrange the dough balls in a greased 9×13 inch baking dish, leaving small gaps between rolls.
- Cover the rolls and let them rise again for 30-45 minutes until puffy and slightly expanded.
- Preheat the oven to 350F (175C). Brush roll tops with melted butter or egg wash.
- Bake for 18-22 minutes until golden brown and a toothpick comes out clean.
- Remove from the oven and let cool for 10 minutes before serving warm.
Notes
- Check yeast freshness by ensuring the mixture becomes frothy and bubbly, which indicates active fermentation and will help your rolls rise perfectly.
- Use room temperature ingredients like milk, egg, and butter to help create a smooth, consistent dough that develops beautifully.
- For softer rolls, brush with melted butter immediately after baking and cover with a clean kitchen towel to trap steam and keep them tender.
- Gluten-free bakers can substitute all-purpose flour with a high-quality gluten-free blend, but add xanthan gum for better texture and structure.
