Description

Sopapilla Cheesecake is a delightful Mexican-inspired treat that’ll melt in your mouth with its creamy filling and crispy cinnamon-sugar topping. Grab your ingredients and get ready to bake a crowd-pleasing dessert that brings a sweet twist to your table.

Ingredients

Scale

Main Ingredients:

  • 1 container croissant dough
  • 2 containers cream cheese
  • 1 egg

Supporting Ingredients:

  • 5 tablespoons sugar
  • 40 grams butter
  • 2 tablespoons sugar
  • ½ teaspoon ground cinnamon
  • 56 drops liquid vanilla
  • Flour for sprinkling

Finishing Ingredients:

  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F and line a rectangular baking dish with parchment paper.
  2. Dust a clean surface lightly with flour. Unroll the croissant dough and split it into two equal sections.
  3. Carefully press the perforated dough sections together, sealing the edges with your fingers without puncturing the surface.
  4. Transfer the sealed dough to the prepared baking dish, creating an even bottom layer.
  5. In a mixing bowl, whisk 2 containers of cream cheese, 5 tablespoons of sugar, and 1 egg until completely smooth.
  6. Allow the cream cheese mixture to rest for 5 minutes, then gently pour it over the dough base.
  7. Cover the cream cheese layer with the remaining dough section, stretching it to cover completely.
  8. Microwave 40 grams of butter for 15-20 seconds until melted. Stir in 2 tablespoons of sugar and ½ teaspoon ground cinnamon.
  9. Brush the cinnamon-butter mixture evenly across the top dough layer.
  10. Bake at 350°F for 30 minutes, until the top turns golden brown.
  11. Remove from the oven and let the dessert cool for 10-15 minutes before slicing into desired serving sizes.

Notes

  • Check croissant dough carefully to ensure it doesn’t have holes, which could cause leaking during baking.
  • Let cream cheese mixture rest for exactly five minutes to help ingredients blend smoothly and create a consistent texture.
  • When brushing butter mixture on top, use a pastry brush for even coverage and a beautiful golden finish.
  • For a gluten-free version, substitute croissant dough with a gluten-free puff pastry or alternative dough to accommodate dietary needs.
