Ingredients
Scale
Main Ingredients:
- 5 cups fresh strawberries
- 2 cups all-purpose flour
- 2 cups whole milk
- 1 cup unsalted butter
- 4 ounces cream cheese
Supporting Ingredients:
- 1 ½ cups sugar
- 3 tablespoons sugar
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- ½ teaspoon salt
Instructions
- Preheat your oven to 375°F and pour 1 cup melted unsalted butter into an 11×8 inch baking dish.
- Beat 4 ounces softened cream cheese at medium speed until creamy. Mix in 3 tablespoons sugar and 1 teaspoon vanilla extract until fully combined.
- Whisk 2 cups flour, 1 tablespoon baking powder, ½ teaspoon salt, and 1 ½ cups sugar in a large bowl. Gradually stir in 2 cups whole milk until batter becomes smooth.
- Pour the batter into the butter-coated baking dish. Distribute 4 cups halved strawberries evenly across the surface.
- Drop heaping teaspoons of the cream cheese mixture randomly over the strawberry-covered batter.
- Cover the dish with aluminum foil and bake at 375°F for 25 minutes. Remove foil and continue baking for another 20-25 minutes until a toothpick inserted in the center comes out clean.
- Toss the remaining 1 cup strawberries with 1 tablespoon sugar for topping.
- Let the cobbler cool slightly. Dust with confectioners’ sugar and serve warm or chilled with the sugared strawberry topping.
Notes
- Use room-temperature cream cheese for the smoothest, creamiest texture without lumps.
- Slice strawberries uniformly to ensure even distribution and consistent baking throughout the cobbler.
- For a gluten-free version, substitute all-purpose flour with a cup-for-cup gluten-free flour blend.
- If fresh strawberries aren’t available, frozen berries work well – just thaw and drain excess liquid before adding to the recipe.
