- Grab a large mixing bowl and pour 9 cups (12 oz) of Rice Chex cereal into it. Set the bowl aside for now.
- Take a microwave-safe bowl and add the entire 12 oz package of white chocolate chips. Microwave at 50% power for 30 seconds, then stir. Repeat this process every 30 seconds until the chocolate melts completely and becomes smooth, which typically takes 1-2 minutes total.
- Quickly blend the 3.4 oz package of cheesecake instant pudding mix and ¼ cup of cherry gelatin mix into the melted white chocolate. Stir rapidly until the mixture becomes uniform and develops a soft pink color.
- Immediately drizzle the warm chocolate mixture over the Chex cereal. Use a rubber spatula to gently fold and coat each piece, ensuring complete and even coverage.
- Transfer the chocolate-covered cereal to a large resealable plastic bag or wide container. Sprinkle ¼ cup of powdered sugar over the mixture.
- Seal the bag or container tightly. Shake vigorously for 30-45 seconds until every piece of cereal is thoroughly coated and no longer appears wet or sticky.
