Ingredients
Scale
Mains:
- 2 cups all-purpose flour
- 2 large eggs
- 1 cup milk
- 3 medium apples
Liquids and Binding:
- ¼ cup vegetable oil
- 2 tablespoons (30 ml) vanilla extract
- ¼ cup buttermilk
Seasonings and Extras:
- ½ cup granulated sugar
- 2 teaspoons (10 ml) ground cinnamon
- 1 teaspoon (5 ml) baking powder
- ½ teaspoon (2.5 ml) salt
- ¼ teaspoon (1.25 ml) nutmeg
- Vegetable oil for frying
Instructions
- Gather all ingredients: 2 cups all-purpose flour (240g), ¼ cup granulated sugar (50g), 2 teaspoons baking powder, ½ teaspoon salt, 2 large eggs, 1 ½ cups whole milk (360ml), ¼ cup melted butter (57g), 2 diced medium apples, 1 teaspoon ground cinnamon.
- Whisk flour, sugar, baking powder, and salt together in a spacious mixing bowl until completely combined.
- Crack eggs into a separate bowl and beat until smooth. Pour milk and melted butter into egg mixture, stirring until well incorporated.
- Pour wet ingredients into dry ingredients and mix with a wooden spoon until just blended. Small lumps are acceptable.
- Fold diced apples and cinnamon into batter, ensuring even distribution throughout the mixture.
- Heat waffle iron to medium-high setting (375°F/190°C). Lightly coat iron surfaces with non-stick cooking spray.
- Ladle approximately ½ cup batter into center of preheated waffle iron. Close lid and cook for 3-4 minutes until golden brown and crispy.
- Transfer cooked waffle to wire rack. Repeat process with remaining batter.
- Prepare glaze by mixing 1 cup powdered sugar (120g), 2 tablespoons milk, and ½ teaspoon vanilla extract in small bowl.
- Drizzle glaze generously over warm waffles, allowing it to cascade down sides.
- Serve immediately while waffles remain warm and glaze is freshly dripped.
Notes
- Choose firm, tart apples like Granny Smith or Honeycrisp for the best flavor and texture in your fritters.
- Grate the apples coarsely so they provide nice chunks and maintain some crispness when cooked.
- Ensure your waffle iron is preheated and lightly greased to prevent sticking and create a crispy exterior.
- For gluten-free options, swap all-purpose flour with a 1:1 gluten-free baking blend to keep the same delicious results.
