Description
Snickerdoodle Cobbler became my favorite weekend dessert when I discovered how simple it feels to create such a comforting treat. Cinnamon-sugar goodness combines with buttery cake-like texture, delivering a delightful dessert that feels like a warm hug straight from the oven.
Ingredients
Scale
Main Ingredients:
- 1 cup all-purpose flour
- ¾ cup granulated sugar
- ¾ cup brown sugar (light or dark)
- ½ cup milk
- ¼ cup unsalted butter, melted
Supporting Ingredients:
- 2 teaspoons baking powder
- 1 ½ teaspoons ground cinnamon
- ½ teaspoon salt
- 1 teaspoon vanilla extract
Liquid:
- 1 ½ cups very hot water
Instructions
- Preheat the oven to 350°F (175°C). Coat a 9×13-inch baking dish with 1 tablespoon softened butter or non-stick cooking spray.
- Whisk 1 cup all-purpose flour, 2 teaspoons baking powder, ½ teaspoon salt, and ¾ cup granulated sugar in a medium mixing bowl until combined.
- Pour ½ cup milk, ¼ cup melted unsalted butter, and 1 teaspoon vanilla extract into the dry ingredients. Stir until a smooth batter forms without overmixing.
- Transfer the batter to the prepared baking dish, spreading it evenly across the bottom with a rubber spatula.
- Combine ¾ cup brown sugar, ¼ cup granulated sugar, and 1 ½ teaspoons ground cinnamon in a separate small bowl.
- Sprinkle the entire cinnamon-sugar mixture across the surface of the batter, covering it completely.
- Carefully pour 1 ½ cups very hot water over the entire dish. Do not stir or mix the layers.
- Slide the dish into the preheated oven and bake for 40-45 minutes until the top turns golden brown and a crisp crust forms.
- Remove from the oven and let the cobbler rest for 10 minutes. This helps the syrupy bottom layer set slightly before serving.
- Serve warm, scooping directly from the baking dish to capture the gooey texture and cinnamon-rich flavor.
Notes
- Work with room temperature ingredients to ensure smooth, even mixing of the batter and prevent lumps.
- Measure flour correctly by spooning it into the measuring cup and leveling off with a knife to avoid a dense, heavy cobbler.
- For a gluten-free version, swap standard flour with a cup-for-cup gluten-free blend, which will maintain the same texture and taste.
- When adding hot water, pour slowly and evenly across the surface to create the signature gooey layer without disturbing the batter.
