Scale
Dry Ingredients:
- 2¼ cups all-purpose flour
- 2 teaspoons culinary-grade matcha powder
- 1 tablespoon baking powder
- ¾ cup granulated sugar
- ½ teaspoon salt
Wet Ingredients:
- 2 large eggs
- 1 cup Lifeway Ceremonial Matcha Whole Milk Kefir
- ½ cup vegetable oil
- ½ teaspoon vanilla extract
Mix-ins:
- ⅔ cup white chocolate chips
- ½ cup mini white chocolate chips
Instructions
- Warm your oven to a toasty 425°F and line a jumbo muffin pan with parchment liners for easy removal.
- Grab a large mixing bowl and whisk together 2¼ cups flour, 2 teaspoons matcha powder, ¾ cup sugar, 1 tablespoon baking powder, and ½ teaspoon salt until perfectly blended.
- In a separate bowl, crack 2 large eggs and whisk them smooth, then pour in 1 cup kefir, ½ cup vegetable oil, and ½ teaspoon vanilla extract. Mix these wet ingredients until they’re fully incorporated.
- Gently fold the liquid mixture into your dry ingredients, stirring just until combined. Resist overmixing to keep your muffins tender.
- Sprinkle ⅔ cup white chocolate chips into the batter, stirring them in with a light hand.
- Distribute the batter evenly across your prepared muffin cups, filling each about ¾ full.
- If desired, sprinkle ½ cup mini white chocolate chips across the tops of your muffins.
- Place the pan in the oven at 425°F for 6 minutes to create a nice initial rise.
- Reduce the temperature to 375°F and continue baking for 15–19 minutes until a toothpick inserted comes out clean.
- Allow muffins to rest in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Always sift the matcha powder to prevent lumps and ensure even distribution throughout the muffin batter.
- Use room temperature ingredients for smoother mixing and better rise in your muffins.
- For a dairy-free version, swap kefir with almond milk or coconut yogurt to maintain moisture.
- Cool muffins completely before storing to prevent condensation and maintain their perfect texture.
