Instructions

  1. Warm your oven to a toasty 425°F and line a jumbo muffin pan with parchment liners for easy removal.
  2. Grab a large mixing bowl and whisk together 2¼ cups flour, 2 teaspoons matcha powder, ¾ cup sugar, 1 tablespoon baking powder, and ½ teaspoon salt until perfectly blended.
  3. In a separate bowl, crack 2 large eggs and whisk them smooth, then pour in 1 cup kefir, ½ cup vegetable oil, and ½ teaspoon vanilla extract. Mix these wet ingredients until they’re fully incorporated.
  4. Gently fold the liquid mixture into your dry ingredients, stirring just until combined. Resist overmixing to keep your muffins tender.
  5. Sprinkle ⅔ cup white chocolate chips into the batter, stirring them in with a light hand.
  6. Distribute the batter evenly across your prepared muffin cups, filling each about ¾ full.
